A Heart-Healthy Recipe: Black Bean Quesadillas

February is National Heart Health Month, a time to focus on making choices that support a strong and healthy heart. One of the best ways to take care of your heart is through nutrition—choosing meals that are rich in fiber, healthy fats, and essential nutrients.

At Community Health Centers of South Central Texas, we encourage simple, delicious meals that are good for your heart and easy to prepare. That’s why we’re sharing a heart-healthy recipe you can enjoy with your family: Black Bean Quesadillas. This dish is packed with fiber-rich black beans, heart-friendly whole wheat tortillas, and flavorful spices that make healthy eating enjoyable.

Why Black Bean Quesadillas Are a Heart-Healthy Choice

A heart-healthy recipe should include ingredients that support cardiovascular health. Here’s why this dish is a great option:

  • Black beans are high in fiber, which helps lower bad cholesterol (LDL) and supports digestion.
  • Whole wheat tortillas provide complex carbohydrates that help maintain steady blood sugar levels.
  • Cheese (used in moderation) adds protein and calcium, essential for strong bones and muscles.
  • Fresh Salsa add flavor without extra sodium, which can contribute to high blood pressure.

Eating meals like this regularly can help reduce the risk of heart disease while keeping meals exciting and delicious.

  2. Spray pan with vegetable oil and place one tortilla into the pan.
  3. Place ¼ of the bell pepper, black beans, and cheese onto the tortilla.

  5. Press down slightly to seal the sides together, and then flip the quesadilla over to brown both sides.
  6. Repeat process with remaining tortillas. Spoon a little salsa and lettuce on top and enjoy.

Small Changes for a Healthier Heart

Incorporating heart-healthy recipes like this one into your weekly meals is a great step toward better heart health. Here are a few more simple changes you can make:

  • Choose whole grains over refined grains for added fiber.
  • Add more fruits and vegetables to every meal for essential vitamins and antioxidants.
  • Use healthy fats like olive oil instead of butter or margarine.
  • Limit processed foods that contain excess sodium and added sugars.

Your heart works hard for you every day—give it the care it deserves with nourishing, wholesome foods!
